AB  - Metals and metal oxides have subpar antibacterial activities compared to those of small-molecule antibiotics, yet there are hopes that with proper compositional and structural adjustments this gap might be bridged. In this study, titanium dioxide (TiO2) nanoparticles were mechanically activated and combined with particulate silver through simple reduction process elicited by UV irradiation and assisted with the ultrasound. The resulting powders in various combinations (Ag vs. no Ag, activated vs. non-activated) were characterized using a range of experimental techniques and assessed for their antibacterial activities. The preparation procedure presented in this work prevails over the disadvantages of many chemical routes, most critically by avoiding the use of toxic substances. The mechanical activation did not reduce the particle size or crystallinity of TiO2 nor did it consistently alter the bandgap, yet it enabled the doubling of the amount of silver incorporable into the material. Further, while both mechanical activation and the addition of silver in the amount not exceeding 0.5 wt% produced barely detectable structural changes in the material, they both augmented its antibacterial activity. The precursor TiO2 powder produced no inhibition zone against any of the four bacterial species tested, while the mechanical activation of TiO2 led to the formation of distinct inhibition zones against each of the four bacterial species tested. The addition of silver to activated TiO2 further widened the inhibition zones and it also imparted the antibacterial activity to non-activated TiO2. The boost in the antibacterial activity achieved by the short mechanical activation was of a similar magnitude as the boost obtained after the addition of silver. The antibacterial activity was not different for different species when no silver was added to the system. However, with the addition of silver, species selectivity was obtained, as the composites were more effective against the two Gram-negative species (Escherichia coli and Klebsiella pneumoniae) than against the two Gram-positive ones (Staphylococcus aureus and Bacillus subtilis). The antibacterial activity increased with the addition of silver in the broth assay, but it was mediocre compared to that detected in the agar assay, attesting to the poor dispersability of the powders and their best performance when the bacterial cells migrate to the composite surface than vice versa. The findings of this study give hope that with appropriate microstructural or compositional alterations, the antibacterial activity of metal oxide powders and inorganic materials in general can be made comparable to that of small-molecule antibiotics.

AB  - In this study, levan from Bacillus licheniformis NS032 was modified in an aqueous medium by octenyl succinic
anhydride (OSA), and the properties of the obtained derivatives were studied. The maximum efficiency in the
synthesis reaction was achieved at 40 ◦C and a polysaccharide slurry concentration of 30 %. Increasing the
reagent concentration (2–10 %) led to an increase in the degree of substitution (0.016–0.048). Structures of
derivatives were confirmed by FTIR and NMR. Scanning electronic microscopy, thermogravimetry, and dynamic
light scattering analyses showed that the derivatives with degrees of substitution of 0.025 and 0.036 retained
levan’s porous structure and thermostability and showed better colloidal stability than the native polysaccharide.
The intrinsic viscosity of derivatives increased upon modification, while the surface tension of the 1 % solution
was lowered to 61 mN/m. Oil-in-water emulsions prepared with sunflower oil (10 % and 20 %) by mechanical
homogenization and 2 and 10 % derivatives in the continuous phase showed mean oil droplet sizes of 106–195
μm, while the distribution curves exhibited bimodal character. The studied derivatives have a good capacity to
stabilize emulsions, as they have a creaming index ranging from 73 % to 94 %. The OSA-modified levans could
have potential applications in new formulations of emulsion-based systems.

AB  - Allium species are known as a rich source of many compounds with potential healing effects. Biofortification is recognized as an effective agrotechnical measure for raising the level of biogenic elements—especially microelements in the edible parts of these species, so Allium can be considered as a ‘natural dietary supplement’. The aim of this research was to test the effects of foliar application of Se fertilizer (Na2SeO4) in different doses (control—0, 10, 20 and 30 g per ha) on the content of macro, microelements and secondary metabolites (SMs)—free phenolics, flavonoids and hydroxycinnamic acid derivatives in the edible parts, i.e., leaves of two selected Allium species in Serbia (A. odorum and A. schoenoprasum), which grew in open field conditions over the course of two growing seasons. The bioaccumulation factor (BAF), as an indicator of the ability of plants to accumulate biogenic elements, was also determined. Although with no full regularity, the dose of 10 g of Se per ha yielded the highest content for the most biogenic elements for both alliums in the first growing season, i.e., a dose of 20 g of Se per ha for A. schoenoprasum, and a dose of 30 g of Se per ha for A. odorum in the second growing season. The obtained results justified the Se-biofortification of different alliums. The BAF values indicated the ability of both Allium species to accumulate S, K and P in their leaves during both growing seasons. The accumulation of potentially toxic elements was not recorded for either species, emphasizing the safety of the produced plant material for human consumption. Additionally, Se-treated plants had higher SM contents compared to control plants. The growing season also showed an impact on SM content; i.e., in the second season, characterized as drought-stressed, the synthesis of SMs was significantly higher compared to that in the first season. Further research should be directed towards finding the appropriate dose of Se, expanded in the sense of conducting research in controlled conditions, as well as different ways of applying Se fertilizer. The idea of this study was also to popularize the examined Allium species, which are rarely grown in the territory of Serbia.

Okara-Enriched Gluten-Free Bread: Nutritional, Antioxidant and Sensory Properties

AB  - The aim of this study was to produce an eco-innovative gluten-free bread with a pleasant taste and a unique formulation that includes the highest quality grains and pseudocereals (buckwheat; rice; and millet); and okara; a by-product of soy milk production. The mixture of pseudocereal and cereal flour contained buckwheat flour 45%, rice flour 33%, and millet flour 22%. Three gluten-free breads; each containing different contents of gluten-free flour (90%, 80%, and 70%, respectively); okara (10%, 20%, and 30%, respectively); and a control sample (without okara); were prepared and subjected to sensory evaluation. The okara-enriched gluten-free bread with the highest sensory score was selected for further analysis of physico-chemical (total proteins; total carbohydrates; insoluble fiber; soluble fiber; sugars; total lipids; saturated fatty acids; and salt) and functional properties (total phenolic content and antioxidant properties). The highest sensory scores were obtained for 30% okara-enriched gluten-free bread including taste; shape; odor; chewiness; and cross-section properties; classifying this bread in the category of very good quality and excellent quality (mean score 4.30 by trained evaluators and 4.59 by consumers). This bread was characterized by a high content of dietary fiber (14%), the absence of sugar; low content of saturated fatty acids (0.8%), rich source of proteins (8.8%) and certain minerals (e.g.,; iron; zinc); and low energy value (136.37 kcal/100g DW). Total phenolic content was 133.75 mgGAE/100g FW; whereas ferric reducing power; ABTS radical cation; and DPPH radical scavenging activity were 119.25 mgAA/100g FW; 86.80 mgTrolox/100g FW; and 49.92 mgTrolox/100g FW; respectively. Okara addition in gluten-free bread production enables the formulation of high-nutritive; good antioxidative; low-energy bread; and better soy milk waste management. © 2023 by the authors.

AB  - The aim of this study was to find the chemical parameters for the differentiation of plum cultivars grown along the fjord areas of Western Norway and Eastern Norway, having specific agroclimatic conditions. Chemical analysis of the fruits confirmed the contents of 13 quantified elements, 22 sugar compounds, 11 organic acids, 19 phenolic compounds, and antioxidant activity in 68 plum cultivars. Dominated contents were noted for nitrogen (with the maximum mean value of 3.11%), potassium (8055.80 mg/kg), and phosphorous (7878.88 mg/kg). Averagely, the highest level of sugars was determined for glucose (244.46 g/kg), fructose (197.92 g/kg), sucrose (208.25 g/kg), and sorbitol (98.02 g/kg), organic acids for malic acid (24.06 g/kg), and for polyphenol compounds were 5-O-caffeoylquinic acid (66.31 mg/kg), and rutin (58.06 mg/kg). Applied principal component analysis has been useful for distinguishing the plum cultivars from three areas in Norway where copper, iron, potassium, magnesium, manganese, and sodium; sucrose, ribose, maltose, and raffinose; p-hydroxybenzoic acid, rutin, ferulic acid, kaempferol 7-O-glucoside, p-coumaric acid, and 5-O-caffeoylquinic acid were the most influential. In regard to human health and future breeding work that will have the aim to produce functional food with high health-related compounds, the plum cultivar ‘Mallard’ should be underlined due to the high level of elements, ‘Valor’ due to high sugar content, ‘Helgøyplomme’ due to content of organic acids, and ‘Diamond’ due to the content of phenolic compounds. © 2023 by the authors.

AB  - Sorghum grain (Sorghum bicolor L. Moench) is a gluten-free cereal with excellent nutritional value and is a good source of antioxidants, including polyphenols, as well as minerals with proven health benefits. Herein, the phenolic composition, elemental profile, and antioxidant activity of sixteen food-grade sorghum grains (S1–S16) grown under agroecological conditions in Serbia were determined. Nine phenolic compounds characteristic of sorghum grains, such as luteolinidin, 5-methoxyluteolinidin, luteolidin derivative, luteolidin glucoside, apigeninidin, 7-methoxyapigeninidin, apigeninidin glucoside, and cyanidin derivative, were quantified. The antioxidant potential of the analyzed sorghum grains was evaluated by UV/Vis (DPPH, ABTS, and FRAP) and Electron Paramagnetic Resonance spectroscopy (hydroxyl and ascorbyl radical scavenging assays). The content of macro- and microelements was determined by Inductively Coupled Plasma Optical Emission spectroscopy. Theoretical daily intakes of selected major and trace elements were assessed and compared with the Recommended Daily Allowance or Adequate Intake. Sample S8 had the highest amount of phenolic compounds, while S4, S6, and S8 exhibited the strongest antioxidative potential. The sorghum studied could completely satisfy the daily needs of macro- (K, Mg, and P) and microelements (Se, Zn, Fe). Pattern recognition techniques confirmed the discrimination of samples based on phenolic profile and elemental analysis and recognized the main markers responsible for differences between the investigated samples. The reaction between hydroxyl radicals and luteolinidin/apigeninidin was investigated by Density Functional Theory and thermodynamically preferred mechanism was determined.

AB  - Lakes and reservoirs are the main water resources for household, irrigation, and industrial use. Hence, it is necessary to control water pollution and have reliable information on water quality, which refers to its suitability for a particular purpose. The main objective of this study was to evaluate the suitability of water for drinking and irrigation purposes from ten artificial lakes on the territory of the Republic of Serbia. The physicochemical parameters were determined using standard analytical methods, whereas the optical emission spectrometry with inductively coupled plasma, ICP-OES, was used to determine the concentrations of 23 macro-, micro-, and trace elements in water. Health risk indices of drinking water and its suitability for irrigation purposes were evaluated. The results of physicochemical parameters, except for total organic matter, indicated that most samples were within the recommended values. Among analyzed elements, the concentration of Mg was elevated in the water of the lakes Srebrno and Prvonek. The results of health risk assessment clearly showed that there was no acute health risk (HQA < 1), whereas long-term risk (HQL) in the studied lakes was observed with respect to As (lakes Grlište and Srebrno), Mn (lakes Srebrno and Prvonek), Ni (Lake Vrutci), and Sr (Lake Grlište). The irrigation criteria indicated that the water from the examined lakes had satisfactory quality for this purpose, except for residual sodium carbonates (RSC). This criterion indicated low quality or unsuitability of the water in 7 lakes. The main outcomes provided valuable information on the suitability of water from the artificial lakes for intended uses.

As-prepared powders were additionally sintered at 1150 °C and 1300 °C. X-ray powder diffraction (XRPD) and scanning electron microscopy (SEM) coupled with electron dispersive spectroscopy (EDS) were used for the detailed examination of phase composition and morphology. The magnetic, dielectric, and ferroelectric properties were investigated. The optimal phase composition in the BaTiO3/NiFe2O4 composite, sintered at 1150 °C, resulted in a wide frequency range stability. Additionally, particular phase composition indicates favorable properties such as low conductivity and ideal-like hysteresis loop behavior. The favorable properties of BaTiO3/NiFe2O4 make this particular composite an ideal material choice for further studies on applications of multi-ferroic devices.

AB  - To investigate the effect of synthesis procedure and sintering temperature on the functional properties of perovskite/spinel ceramics, BaTiO3/CoFe2O4 composites were prepared by thermal decomposition, coprecipitation, and microemulsion method, and sintered at 1150°C and 1300°C. The phase composition and morphology of as-prepared powders as well as sintered ceramics were thoroughly examined by X-ray powder diffraction (XRPD) and scanning electron microscopy (SEM) coupled with electron dispersive spectroscopy (EDS). The dielectric and ferroelectric measurements were performed in detail. Generally, the samples sintered at 1300°C had better performances than those sintered at 1150°C. The composite synthesized by thermal decomposition and sintered at 1300 °C stands out among other prepared BaTiO3/CoFe2O4 ceramics, owing to high stability in the wide frequency range and low leakage currents. The obtained results indicate that such composite might be successfully applied as a functional multiferroic.
AB  - У циљу испитивања утицаја методе синтезе као и температуре синтеровања на функционална својства керамике перовскитно/спинелне структуре, синтетисани су BaTiO3/CoFe2O4 композити методама термалне декомпозиције, копреципитације и микроемулзије, а затим синтеровани на 1150 °C и 1300 °C. Фазни састав и морфологија синтетисаних узорака детаљно су испитани пре и после синтеровања помоћу рендгенске дифракције на праху (XRPD) и скенирајуће електронске микроскпије (SEM) спрегнуте са елекрон дисперзивном спектроскопијом (EDS). Изведена су опсежна испитивања како диелектричних, тако и фероелектричних својстава датих композита. У већини случајева узорци синтеровани на 1300 °C показали су боља својства од узорака синтерованих на 1150 °C. Композит синтетисан методом термалне декомпозиције и синтерован на 1300 °C издваја се од осталих синтетисаних BaTiO3/CoFe2O4 узорака захваљујући великој стабилносту у широком фреквентном опсегу и малим струјама цурења. Добијени резултати недвосмислено указују да истакнути композит може бити успешно примењен као функционални мултифероик.

AB  - Aniline, the main representative of aromatic amines, occurs in a large number
of industries, such as the production of textiles, plastics, medicines, pesticides,
rubber, and varnishes.1 Due to practicality and efficiency, a molecularly imprinted
polymers (MIPs) can be used as sorbents for removing aniline.2 In this study,
magnetic molecularly imprinted polymer was synthesized via suspension
copolymerization while characterization was performed by various methods in order
to obtain an efficient sorbent for the aniline removal from an aqueous solution.
Fourier transform infrared spectroscopy (FT-IR) confirmed characteristic vibrational
bands which suggested successful synthesis of MIP, nitrogen gas adsorption-desorption
measurements as well as mercury porosimetry have shown that the most
dominant pores were mesopores, while scanning electron microscopy with energy
dispersive X-ray spectroscopy (SEM-EDX) confirmed a 3D spherical porous
structure with all the expected elements.

AB  - Radiation shielding is a crucial precautionary measure in decreasing the dose of exposure medical personnel experience. The physical dimensions of these shields, specifically thickness and shape, are dependent on the type of radiation, energy and specific radioactivity. Currently, the most common radiation shielding equipment is made of lead, tungsten or uranium. Although these heavy metals have favorable shielding properties against ionizing radiation, protective garments such as lead aprons are heavy to wear and can pose significant health risks. Taking this into account, the primary goal of this study is to understand the radiation shielding properties of lead-free polymer geopolymer-polyurethane based composites. The geopolymer was synthesized using an 80%-20% mixture of fly ash and a bio-polyol substrate which was subsequently homogenized using MDI44. As a result, 6 samples of the geopolymer-polyurethane based composites were fabricated of which 5 were 90%-10% compositions between the mixture and varying concentrations of BaSO4 and Bi2O3 respectively. The last sample consisted of the pure fly ash/bio-polyol mixture. XRF and ICP analysis was used to chemically characterize the fly ash. The composite structures were analyzed using XRD, while the microstructural morphology was investigated using SEM techniques. Utilizing an energy-dispersive x-ray spectrometer (EDS), elemental abundance and agglomerating behavior was analyzed for each composite variant. The X-ray attenuation measurements pointed out that the obtained composites have the potential for a design of lead-free protective clothing against X-ray shielding in medical applications.

Serbian black truffle Tuber aestivum: Microbiota and effects of different freezing regimes on volatile aroma compounds during storage

AB  - The use of truffles in food is based mainly on the addition of artificial flavors, aiming to achieve an intense aroma in the products. As truffle is a natural product with nutritional and functional properties, it is important to find an optimal method for truffle storage. As the microbiota contribute to truffle aroma, the bacterial and yeast compositions in the rhizosphere and fruiting body of the truffle and the impact of different freezing methods on the volatile profile of the truffle Tuber aestivum during 90 days of the storage were determined. Bacteria and yeasts isolates were identified using 16s rRNA and 18s rRNA. The effect of freezing truffles at -20°C and -80°C with and without previous dipping in liquid N2 on the volatile compounds was observed using GC/MS. The results demonstrated that the isolated bacteria belonged to the phylum Proteobacteria, Firmicutes and Actinobacteria, and the identified species mainly belonged to Firmicutes, genus Bacillus sp. Isolated yeasts were identified as Cryptococcus sp., Debaromyces hanseinii, Candida fermentati and Rhodotorula mucilaginosa. The GC/MS analysis revealed that frozen truffle samples were richer in the compounds 2-butanone, 2-methyl-butanal, methanethiol and 2-butanol after freezing or during storage. The content of DMS, acetaldehyde, 3-octanone, ethanol, and 2-methyl-1-propanol significantly decreased immediately after freezing. Overall, the gained results indicated that freezing of truffles as a preservation method had profound effects on the volatile compounds, while previous dipping in liquid N2 showed no significant impact on the volatile profile of truffle Tuber aestivum.
AB  - Primena tartufa u hrani se uglavnom zasniva na dodavanju veštačkih aroma, sa  ciljem postizanja intenzivne arome tartufa u proizvodima. S obzirom na to da su  tartufi proizvodi sa nutritivnim i funkcionalnim karakteristikama, važno je pronaći  optimalan način za skladištenje tartufa. Pošto mikrobiota doprinosi aromi tartufa,  sastav bakterija i kvasaca u rizosferi i plodonosnom telu srpskog tartufa, kao i uticaj  različitih metoda smrzavanja na isparljiva jedinjenja tartufa Tuber aestivum ispitivan  je tokom 90 dana skladištenja. Bakterije i kvasci su izolovani iz svežeg tartufa i  izolati su identifikovani korišćenjem 16s rRNK i 18s rRNK. Uticaj smrzavanja  tartufa na -20°C i -80°C sa i bez prethodnog potapanja u tečni N2 na sadržaj  isparljivih jedinjenja ispitivan je korišćenjem GC/MS. Rezultati ispitivanja su  pokazali da izolovane bakterije pripadaju carstvu Proteobacteria, Firmicutes i  Actinobacteria, pri čemu identifikovane vrste uglavnom pripadaju Firmicutes, rod  Bacillus sp. Izolovani kvasci su identifikovani kao Cryptococcus sp., Debaromyces  hanseinii, Candida fermentati i Rhodotorula mucilaginosa. Analiza GC/MS je  ukazala na razlike u profilu isparljivih jedinjenja svežeg i smrznutog tartufa.  Smrznuti uzorci su više sadržali komponente kao što su 2-butanon, 2-metil-butanal,  metanetiol i 2-butanol nakon smrzavanja ili tokom skladištenja. Sadržaj DMS,  acetaldehida, 3-octanona, etanola, 2-metil-1-propanola značajno se smanjio odmah  nakon smrzavanja. Dobijeni rezultati ukazuju da smrzavanje tartufa kao metoda  konzervacije ima značajan uticaj na isparljiva jedinjenja, pri čemu potapanje u tečni  N2 nije pokazalo značajan uticaj na isparljiva jedinjenja tartufa Tuber aestivum.

Bacteria and yeasts isolates were identified using 16s rRNA and 18s rRNA. The effect of freezing truffles at -20°C and -80°C with and without previous dipping in liquid N2 on the volatile compounds was observed using GC/MS. The results demonstrated that the isolated bacteria belonged to the phylum Proteobacteria, Firmicutes and Actinobacteria, and the identified species mainly belonged to Firmicutes, genus Bacillus sp. Isolated yeasts were identified as Cryptococcus sp., Debaromyces hanseinii, Candida fermentati and Rhodotorula mucilaginosa. The GC/MS analysis revealed that frozen truffle samples were richer in the compounds 2-butanone, 2-methyl-butanal, methanethiol and 2-butanol after freezing or during storage. The content of DMS, acetaldehyde, 3-octanone, ethanol, and 2-methyl-1-propanol significantly decreased immediately after freezing. Overall, the gained results indicated that freezing of truffles as a preservation method had profound effects on the volatile compounds, while previous dipping in liquid N2 showed no significant impact on the volatile profile of truffle Tuber aestivum., Primena tartufa u hrani se uglavnom zasniva na dodavanju veštačkih aroma, sa  ciljem postizanja intenzivne arome tartufa u proizvodima. S obzirom na to da su  tartufi proizvodi sa nutritivnim i funkcionalnim karakteristikama, važno je pronaći  optimalan način za skladištenje tartufa. Pošto mikrobiota doprinosi aromi tartufa,  sastav bakterija i kvasaca u rizosferi i plodonosnom telu srpskog tartufa, kao i uticaj  različitih metoda smrzavanja na isparljiva jedinjenja tartufa Tuber aestivum ispitivan  je tokom 90 dana skladištenja. Bakterije i kvasci su izolovani iz svežeg tartufa i  izolati su identifikovani korišćenjem 16s rRNK i 18s rRNK. Uticaj smrzavanja  tartufa na -20°C i -80°C sa i bez prethodnog potapanja u tečni N2 na sadržaj  isparljivih jedinjenja ispitivan je korišćenjem GC/MS. Rezultati ispitivanja su  pokazali da izolovane bakterije pripadaju carstvu Proteobacteria, Firmicutes i  Actinobacteria, pri čemu identifikovane vrste uglavnom pripadaju Firmicutes, rod  Bacillus sp. Izolovani kvasci su identifikovani kao Cryptococcus sp., Debaromyces  hanseinii, Candida fermentati i Rhodotorula mucilaginosa. Analiza GC/MS je  ukazala na razlike u profilu isparljivih jedinjenja svežeg i smrznutog tartufa.  Smrznuti uzorci su više sadržali komponente kao što su 2-butanon, 2-metil-butanal,  metanetiol i 2-butanol nakon smrzavanja ili tokom skladištenja. Sadržaj DMS,  acetaldehida, 3-octanona, etanola, 2-metil-1-propanola značajno se smanjio odmah  nakon smrzavanja. Dobijeni rezultati ukazuju da smrzavanje tartufa kao metoda  konzervacije ima značajan uticaj na isparljiva jedinjenja, pri čemu potapanje u tečni  N2 nije pokazalo značajan uticaj na isparljiva jedinjenja tartufa Tuber aestivum.",

AB  - Multifunctional lignin bio-based adsorbent, b-LMS, was obtained via inverse copolymerization in the suspension of acryloyl modified kraft lignin (KfL-AA) and bio-based trimethylolpropane triacrylate (bio-TMPTA). Morphological and structural characterization of KfL-AA and b-LMS was performed using BET, FTIR, Raman, NMR, TGA, SEM, and XPS techniques. The b-LMS microspheres with 253 ± 42 μm diameters, 69.4 m2 g−1 surface area, and 59% porosity efficiently adsorb Malachite Green (MG), Tartrazine (T), and Methyl Red (MR) dye. The influence of pH, pollutant concentration, temperature, and time on the removal efficiency was studied in a batch mode. Favorable and spontaneous processes with high adsorption capacities e.g. 116.8 mg g−1 for MG, 86.8 mg g−1 for T, and 68.6 mg g−1 for MR indicate the significant adsorptive potential of b-LMS. Results from diffusional and single mass transfer resistance studies indicate that pore diffusion is a rate-limiting step. Theoretical calculations confirmed a higher affinity of b-LMS to cationic dye MG compared with an anionic and neutral one, i.e. T and MR, respectively. The data fitting from a flow system, using semi-empirical equations and Pore Surface Diffusion Modelling (PSDM) provided breakthrough point determination. The results from the desorption and competitive adsorption study proved the exceptional performance of b-LMS. Moreover, sulfation of b-LMS, i.e.production of b-LMS-OSO3H, introduced high-affinity sulfate groups with respect to cationic dye and cations. Developed methodology implements the principle of sustainable development and offers concept whose results contribute to the minimization of environmental pollution.

AB  - Mushrooms are experiencing a kind of renaissance as a part of the contemporary human diet. These valuable organisms are more than food, they fi t in perfectly as a novel market group known as nutra-mycoceuticals. Immune-balancing mushroom dietary fibers and secondary metabolites such as polyphenols are the main focus of the healthcare industry. Wellness and cosmetic companies are increasingly using mushroom extracts rich in these ingredients. This review considers the basic molecular immunomodulatory mechanisms of action of the most commonly used mushroom dietary fibers, β-glucans. The literature data on their bioavailability, metabolic transformations, preclinical and human clinical research, and safety are discussed. Immunomodulatory mechanisms of polyphenol ingredients are also considered. These molecules present great potential in the design of the new immunity balancer formulations according to their widespread structural diversity. Finally, we draw attention to the perspectives of modern trends in mushroom nutraceutical and cosmeceutical formulations to strengthen and balance immunity.

AB  - The aim of the current research was to determine the content of (potentially) toxic elements and insecticide residues in monofloral sunflower bee-collected pollen. For micro- and trace elements determination Inductively Coupled Plasma Optical Emission (ICP-OES) analytical method was used while insecticide residue content was monitored by applying Liquid Chromatography-Mass Spectrometry (LC-MS/MS) technique. In total, seventeen micro/trace elements were quantified. None of the twenty four examined insecticides were detected above the limit of detection (LOD) which makes studied sunflower bee-collected pollen eco-friendly both to bees and humans. Based on presence of several toxic as well as potentially toxic elements calculations for estimated weekly intakes (EWI), and oral intakes (OI) were made and used for health risk assessment based on the computation of two different health risk quotients (HQ)- acute (HQA) and long-term (HQL). The obtained results proved that all HQ values for adults were negligible or low except in case of HQL value for arsenic (0.32) which can be characterized as medium. However, in case of children much more precaution is needed due to significant HQL risk for arsenic (1.511). The attained data can help to make additional linkage between bee-collected pollen as food ingredients and potential benefits/risks for human health.

AB  - Newly designed mesoporous brushite-metakaolin-based geopolymer materials were examined with an idea for using this material as a potential adsorbent for Pb(II) removal from aqueous solutions. As a starting component for geopolymer synthesis, a natural raw kaolinite clay with the
addition of 2 wt.%, 4 wt.%, 6 wt.%, 8 wt.%, and 10 wt.% of pure brushite was used. Phase, structural,morphological, and adsorption properties of newly synthesized mesoporous brushite-metakaolin geopolymer materials were examined in detail by the means of XRPD, FTIR, SEM-EDS, BET/BJH, and ICP-OES methods. The ICP-OES results showed that the synthesized material samples with 2 wt.%, 4 wt.%, and 6 wt.% of brushite possess significant adsorption properties and the mechanisms of the adsorption process can be attributed to chemisorption. The most notable result is that brushite-metakaolin-geopolymer with 2 wt.% of brushite have the best efficiency removal, more than 85% of Pb(II).

AB  - The emerging threat of bacterial resistance to antibiotics prompts the urgent search for biomaterials for the treatment of infectious disease. Here we report on the synthesis and characterization of a multiphasic nanocomposite comprising magnetic iron oxide and silver nanoparticles. The method of synthesis involved the combustion of a metalorganic complex and reduction of the silver ions that were exchanged and/or adsorbed on the surface of iron oxide. Different physical and chemical treatments coupled to the reduction process, including ultrasound and Lugol's iodine solution, respectively, homogenized the distribution of the silver nanoparticles on the iron oxide phase. Remarkably, using ascorbic acid as a reductant enhanced the magnetic properties of the material as a result of the reduction of the magnetic matrix alongside the silver cations. The treatment with ultrasound detached large amounts of silver from the iron oxide phase and resulted in the lowest amount of silver incorporated in the nanocomposite. Despite that, this treatment led to the highest antibacterial activity against both Gram-positive and Gram-negative strains, indicating that the homogeneity of the distribution of silver on the iron oxide matrix is a more important determinant of the antibacterial performance than the amount of silver incorporated in the material. At the same time, the treatment with Lugol's iodine equally increased the distribution homogeneity, but induced excessive ion exchange and crystal lattice substitutions, thereby adversely affecting the antibacterial performance. This has indicated that the mode of binding silver to iron oxide can compensate for the positive effects of homogeneous distribution with respect to the antibacterial performance.

AB  - Interest in Cd complexes has been growing in recent years. Cd complexes are considered a potential solution in the search for novel antibiotics that can fight antimicrobial resistance. In addition, Cd complexes draw attention to material chemistry. The main objective of this work was to prepare the first Cd(II) complexes with anionic forms of pyridine-based thiazolyl hydrazone (THs) ligands HLS2 [(E)-4-(4-methoxyphenyl)-2-(2-[pyridine-2-ylmethylene]hydrazinyl)thiazole] and HLS3 [(E)-2-(2-[pyridine-2-ylmethylene]hydrazinyl)-4-(p-tolyl)thiazole] and perform their structural and spectroscopic characterization, as well as stability in solution and upon heating. Studies related to their biological activities and possible electrochromic applications are also being conducted. Complexes [Cd(HLS2)2] (1) and [Cd(HLS3)2] (2) have been characterized by a single-crystal X-ray diffraction and computational analysis of intermolecular interactions responsible for their solid-state structures was performed. Thermal stability of 1 and 2 in the solid-state was analyzed by TGA/MS, where as their solution stability was determined by the spectrophotometric titration method. Electrochemical and in situ UV–Vis spectroelectrochemical analyses of 1 and 2 were carried out to determine redox mechanisms and the influence of the substituents and electrolytes on their redox responses. The antioxidant capacity of both complexes was tested in antioxidant assays, while their antimicrobial activity was tested against five Gram-positive and four Gram-negative bacteria, as well as against three fungi. The obtained results indicate their potent antioxidant capacity. The antimicrobial activity of investigated compounds on almost all tested bacterial strains was stronger than that of the standard antibiotic erythromycin. The results of docking studies indicate that the minor groove DNA is the possible biological target of 1 and 2.

Considering the importance of diet in prevention of diseases associated with oxidative stress, this study was conducted to evaluate antioxidant activity of the methanol extract of wild lignicolus mushroom Fomitopsis pinicola as natural source of functional food ingredients. Nowadays functional food products based on the lignicolous mushroom species are increasingly available on the market. Their powders and extracts are consumed as dietary supplements in the form of capsules or tablets and as additives in the formulation of healthier food products.

AB  - Research background. Inulinases are used for fructooligosaccharide production and they are of interest for both scientific community and industry. Black aspergilli represent a diverse group of species that has use for enzyme production, in particular some species are known as potent inulinase producers. Finding new potential producers from the environment is as important as improving the production with known strains. Safe use of enzymes produced by aspergilli in food industry is placed ahead of their benefit for inulinase production.  Experimental approach. Here we show a specific approach to finding/screening of newly isolated fungal inulinase producers that combines a newly developed screening method and an equally important assessment of the toxigenic potential of the fungus. In this study 39 black aspergilli collected from different substrates in Serbia were identified and assessed for inulinase production.  Results and conclusions. The most common species were Aspergillus tubingensis (51.2 %), followed by A. niger (23.1 %), A. welwitschiae (23.1 %) and A. uvarum (2.6 %). The isolates for inulinase production were selected using a cheap and easy, fast and non-hazardous alternative inulinase screening test developed in this work. Enzymatic activity of selected inulinase-producing strains was confirmed spectrophotometrically. Since some A. niger and A. welwitschiae strains are able to produce mycotoxins ochratoxin A (OTA) and fumonisins (FB), the toxigenic potential of selected inulinase producers was assessed analytically and genetically. Fungal enzyme producer can be considered safe for use in food industry only after comparing the results of both approaches for investigating toxic potential, the direct presence of mycotoxins in the enzyme preparation (analytically) and the presence of mycotoxin gene clusters (genetically). In some strains the absence of OTA and FB production capability was molecularly confirmed by the absence of complete or critical parts of biosynthetic gene clusters, respectively. The two best inulinase producers and mycotoxin non-producers (without mycotoxin production capability as additional safety) were selected as potential candidates for further development of enzyme production.  Novelty and scientific contribution. The presented innovative approach for the selection of potential fungal enzyme producer shows that only non-toxigenic fungi could be considered as useful in food industry. Although this study was done on local isolates, the approach is applicable globally.

AB  - The effect of Ca2+ amount and sintering temperature on mechanical properties of geopolymer-brushite (GPB) binders was investigated. Brushite and raw abandoned kaolinite clay thermally transformed into metakaolin were used for GPB synthesis. The complete phase and structural analyses were performed by X-ray powder diffraction, and Fourier transforms infrared spectroscopy (FT-IR). The pore-filling effect as a consequence of Ca2+ ions incorporation into the hybrid geopolymer networks improved the compressive strength. On the other hand, the chosen biscuit sintering at 800 and 900oC caused the phase transformation of brushite into calcium pyrophosphate, which negatively affected the compressive strength of such materials. The obtained results indicate that the usage of relatively high sintering temperatures is not always the necessary step for producing geopolymer-based types of cement with prominent mechanical properties.
AB  - U ovom radu ispitivan je uticaj količine dodatog brušita i temperature sinterovanja na mehanička svojstva geopolimer-brušit veziva. Kao
polazni materijali za sintezu korišćeni su kaolinitska glina i sintetisani brušit. Kompletna fazna i strukturna analiza izvršena je difrakcijom
rendgenskih zraka na prahu i infracrvenom spektroskopijom sa Furijeovom transformacijom. AB  - Nickel ferrite nanoparticles were synthesized via thermal decomposition of β-diketonato complexes of nickel(II) and iron(III). The mechano-chemical activation of the complex precursors was used to ensure the increase in the reaction activity and consequently reduce thermal decomposition temperature. The prepared sample was thoroughly characterized by X-ray powder diffraction, FT-IR spectroscopy, scanning electron microscopy (SEM) coupled with electron dispersive spectroscopy (EDS), and transmission electron microscopy (TEM). X-ray powder diffraction and FT-IR confirmed the spinel phase of the investigated powder. SEM and TEM revealed the ultrafine nature of nanosized polygonal particles, with a pronounced agglomeration effect. The capacity for electrocatalytic applications was examined using cyclic voltammetry (CV) and electrical impedance spectroscopy (EIS). Electrocatalytic measurements pointed out that the addition of 5% of nickel ferrite as a modifier to carbon paste electrode caused a current increase and a decrease of the EIS semicircle. Further increase in the amount of the modifier decreased heterogeneity of the electrode surface and served as excellent sensor for the detection of gallic acid in the concentration range from 1 to 10 µM with the detection limit of 0.27 µM. This unambiguously indicated the significant improvement in electrode transfer rate and better characteristics of the diffusion layer.

Polyphenolic and Chemical Profiles of Honey From the Tara Mountain in Serbia

AB  - This study presents a detailed characterization of 27 honey samples from the Tara Mountain region in Serbia using different comprehensive techniques and methods. The types of the honey samples were defined as monofloral (4 samples), honeydew (5 samples) and polyfloral (18 samples) honey based on determined polyphenol content, antioxidant activity, electrical conductivity and melissopalynological analyses. Physicochemical parameters such as pH (4.13–4.94), diastase activity (24.20–41.70 DN), acidity (14.60–29.70 meq/kg), content of 5-(hydroxymethyl)furfural (in range below 5, up to 16.90 mg/kg), sucrose (0.20–3.90 g/100 g), and moisture content (15.01–19.23%) confirmed the required quality of the honey samples. Sensory analysis revealed honey characteristics favorable to consumers. Analyses of 19 phenolic compounds using ultra-high-performance liquid chromatography with a diode-array detection and triple quadrupole mass spectrometry (UHPLC-DAD-MS/MS) revealed six phenolic acids and 13 other compounds from the group of flavonoids and their glycosides. In all the samples the highest content was determined for p-coumaric acid, followed by caffeic acid and pinocembrin. Besides total phenolic content and radical scavenging activity, antimicrobial activity was also examined. Most honey samples showed bactericidal activity against Staphylococcus aureus and bacteriostatic activity against Escherichia coli, while none of the honey samples inhibited the growth of Candida albicans. Chemometric analyses were applied for an in-depth study of the results to further evaluate the characteristics of the honey samples studied. Principal component analysis (PCA) was used for assessing the differences in physicochemical parameters, polyphenols content and antioxidant capacity between honey samples. The unrooted cluster tree was used to group the samples based on the melissopalynological analyses.

AB  - The present work determined complete mineral profile of four different types of grains (spelt, soybean, maize, and buckwheat) grown under two growing systems – conventional and organic. The contents of 20 macro-, micro and trace elements were analysed in the examined grains by inductively coupled plasma-optical emission spectrometry (ICP-OES). In most samples, nine elements were present in concentrations higher than 10 mg/kg. The remaining elements were present at lower concentrations or in traces or not detected in certain samples. Aluminium and arsenic, as two toxic elements, were detected only in organic buckwheat grains. Based on the obtained results for the mineral contents, a nutritive assessment of the quality of grains of spelt, soybean, maize, and buckwheat were made. Results of nutritional assessment showed that spelt, soybean, and buckwheat grains could potentially be good sources of several minerals for human diet. On the other hand, the presence of some toxic elements, such as cadmium and strontium, should be monitored. Results of principal component analysis (PCA) and hierarchical cluster analysis (HCA) shown that the mineral composition, to a much greater extent, depended on the botanical origin of grains as compared to the production system.

AB  - The aim of this study was to examine the quality of real samples of drinking water, collected from the territory of the city of Požega and the surrounding rural areas. An analytical technique of inductively coupled plasma with optical emission spectrometry (ICP-OES) was used to determine the concentrations of macro-and microelements in water samples. The obtained results were compared with the maximum allowed concentrations of elements specified by the national Regulation on hygienic quality of drinking water, as well as the recommendations of the World Health Organization (WHO) and the US Environmental Protection Agency (EPA). The analysed waters were low-mineralized (<1000 mg/L), calcium waters, with low sodium content. The concentrations of all tested elements in the water samples were within the allowed values. There were obvious differences in chemical composition between surface water samples and groundwater samples. All tested waters can be safely used for irrigation, because the risk of soil salinization, sodium accumulation and harmful effects of boron on crops was assessed as insignificant.
AB  - Cilj ovog rada bio je ispitivanje kvaliteta realnih uzoraka vode za piće, prikupljenih sa teritorije grada Požege i okolnih seoskih naselja. Za određivanje koncentracije makro- i mikroelemenata u uzorcima vode korišćena je analitička tehnika induktivno kuplovana plazma sa optičkom emisionom spektrometrijom, ICP-OES. Dobijeni rezultati upoređivani su sa maksimalno dozvoljenim kocentracijama elemenata propisanim nacionalnim Pravilnikom o higijenskoj ispravnosti vode za piće, kao i preporukama Svetske zdravstvene organizacije (WHO) i Američke agencije za zaštitu životne sredine (EPA). Analizirane vode su malomineralizovane (<1000 mg/L), kalcijumskog tipa i sa niskim sadržajem natrijuma. Sadržaj svih ispitivanih elemenata u uzorcima vode bio je u granicama dozvoljenih vrednosti. Konstatovano je da postoje očigledne razlike u makro- i mikrokomponentnom hemijskom sastavu između uzoraka površinske vode i uzoraka podzemne vode. Ispitivane vode mogu bezbedno da se koriste u meliorativne svrhe, jer je rizik od zasoljavanja zemljišta, nagomilavanja natrijuma i štetnog uticaja bora na biljne kulture procenjen kao neznatan.

The obtained results were compared with the maximum allowed concentrations of elements specified by the national Regulation on hygienic quality of drinking water, as well as the recommendations of the World Health Organization (WHO) and the US Environmental Protection Agency (EPA). The analysed waters were low-mineralized (<1000 mg/L), calcium waters, with low sodium content. The concentrations of all tested elements in the water samples were within the allowed values. There were obvious differences in chemical composition between surface water samples and groundwater samples. All tested waters can be safely used for irrigation, because the risk of soil salinization, sodium accumulation and harmful effects of boron on crops was assessed as insignificant., Cilj ovog rada bio je ispitivanje kvaliteta realnih uzoraka vode za piće, prikupljenih sa teritorije grada Požege i okolnih seoskih naselja. Za određivanje koncentracije makro- i mikroelemenata u uzorcima vode korišćena je analitička tehnika induktivno kuplovana plazma sa optičkom emisionom spektrometrijom, ICP-OES. Dobijeni rezultati upoređivani su sa maksimalno dozvoljenim kocentracijama elemenata propisanim nacionalnim Pravilnikom o higijenskoj ispravnosti vode za piće, kao i preporukama Svetske zdravstvene organizacije (WHO) i Američke agencije za zaštitu životne sredine (EPA). Analizirane vode su malomineralizovane (<1000 mg/L), kalcijumskog tipa i sa niskim sadržajem natrijuma. Sadržaj svih ispitivanih elemenata u uzorcima vode bio je u granicama dozvoljenih vrednosti. Konstatovano je da postoje očigledne razlike u makro- i mikrokomponentnom hemijskom sastavu između uzoraka površinske vode i uzoraka podzemne vode. Ispitivane vode mogu bezbedno da se koriste u meliorativne svrhe, jer je rizik od zasoljavanja zemljišta, nagomilavanja natrijuma i štetnog uticaja bora na biljne kulture procenjen kao neznatan.",
