AB  - Allium species are known as a rich source of many compounds with potential healing effects. Biofortification is recognized as an effective agrotechnical measure for raising the level of biogenic elements—especially microelements in the edible parts of these species, so Allium can be considered as a ‘natural dietary supplement’. The aim of this research was to test the effects of foliar application of Se fertilizer (Na2SeO4) in different doses (control—0, 10, 20 and 30 g per ha) on the content of macro, microelements and secondary metabolites (SMs)—free phenolics, flavonoids and hydroxycinnamic acid derivatives in the edible parts, i.e., leaves of two selected Allium species in Serbia (A. odorum and A. schoenoprasum), which grew in open field conditions over the course of two growing seasons. The bioaccumulation factor (BAF), as an indicator of the ability of plants to accumulate biogenic elements, was also determined. Although with no full regularity, the dose of 10 g of Se per ha yielded the highest content for the most biogenic elements for both alliums in the first growing season, i.e., a dose of 20 g of Se per ha for A. schoenoprasum, and a dose of 30 g of Se per ha for A. odorum in the second growing season. The obtained results justified the Se-biofortification of different alliums. The BAF values indicated the ability of both Allium species to accumulate S, K and P in their leaves during both growing seasons. The accumulation of potentially toxic elements was not recorded for either species, emphasizing the safety of the produced plant material for human consumption. Additionally, Se-treated plants had higher SM contents compared to control plants. The growing season also showed an impact on SM content; i.e., in the second season, characterized as drought-stressed, the synthesis of SMs was significantly higher compared to that in the first season. Further research should be directed towards finding the appropriate dose of Se, expanded in the sense of conducting research in controlled conditions, as well as different ways of applying Se fertilizer. The idea of this study was also to popularize the examined Allium species, which are rarely grown in the territory of Serbia.

Okara-Enriched Gluten-Free Bread: Nutritional, Antioxidant and Sensory Properties

AB  - The aim of this study was to produce an eco-innovative gluten-free bread with a pleasant taste and a unique formulation that includes the highest quality grains and pseudocereals (buckwheat; rice; and millet); and okara; a by-product of soy milk production. The mixture of pseudocereal and cereal flour contained buckwheat flour 45%, rice flour 33%, and millet flour 22%. Three gluten-free breads; each containing different contents of gluten-free flour (90%, 80%, and 70%, respectively); okara (10%, 20%, and 30%, respectively); and a control sample (without okara); were prepared and subjected to sensory evaluation. The okara-enriched gluten-free bread with the highest sensory score was selected for further analysis of physico-chemical (total proteins; total carbohydrates; insoluble fiber; soluble fiber; sugars; total lipids; saturated fatty acids; and salt) and functional properties (total phenolic content and antioxidant properties). The highest sensory scores were obtained for 30% okara-enriched gluten-free bread including taste; shape; odor; chewiness; and cross-section properties; classifying this bread in the category of very good quality and excellent quality (mean score 4.30 by trained evaluators and 4.59 by consumers). This bread was characterized by a high content of dietary fiber (14%), the absence of sugar; low content of saturated fatty acids (0.8%), rich source of proteins (8.8%) and certain minerals (e.g.,; iron; zinc); and low energy value (136.37 kcal/100g DW). Total phenolic content was 133.75 mgGAE/100g FW; whereas ferric reducing power; ABTS radical cation; and DPPH radical scavenging activity were 119.25 mgAA/100g FW; 86.80 mgTrolox/100g FW; and 49.92 mgTrolox/100g FW; respectively. Okara addition in gluten-free bread production enables the formulation of high-nutritive; good antioxidative; low-energy bread; and better soy milk waste management. © 2023 by the authors.

Micro/trace/toxic elements and insecticide residues level in monofloral bee-collected sunflower pollen- health risk assessment

AB  - The aim of the current research was to determine the content of (potentially) toxic elements and insecticide residues in monofloral sunflower bee-collected pollen. For micro- and trace elements determination Inductively Coupled Plasma Optical Emission (ICP-OES) analytical method was used while insecticide residue content was monitored by applying Liquid Chromatography-Mass Spectrometry (LC-MS/MS) technique. In total, seventeen micro/trace elements were quantified. None of the twenty four examined insecticides were detected above the limit of detection (LOD) which makes studied sunflower bee-collected pollen eco-friendly both to bees and humans. Based on presence of several toxic as well as potentially toxic elements calculations for estimated weekly intakes (EWI), and oral intakes (OI) were made and used for health risk assessment based on the computation of two different health risk quotients (HQ)- acute (HQA) and long-term (HQL). The obtained results proved that all HQ values for adults were negligible or low except in case of HQL value for arsenic (0.32) which can be characterized as medium. However, in case of children much more precaution is needed due to significant HQL risk for arsenic (1.511). The attained data can help to make additional linkage between bee-collected pollen as food ingredients and potential benefits/risks for human health.

AB  - The present work determined complete mineral profile of four different types of grains (spelt, soybean, maize, and buckwheat) grown under two growing systems – conventional and organic. The contents of 20 macro-, micro and trace elements were analysed in the examined grains by inductively coupled plasma-optical emission spectrometry (ICP-OES). In most samples, nine elements were present in concentrations higher than 10 mg/kg. The remaining elements were present at lower concentrations or in traces or not detected in certain samples. Aluminium and arsenic, as two toxic elements, were detected only in organic buckwheat grains. Based on the obtained results for the mineral contents, a nutritive assessment of the quality of grains of spelt, soybean, maize, and buckwheat were made. Results of nutritional assessment showed that spelt, soybean, and buckwheat grains could potentially be good sources of several minerals for human diet. On the other hand, the presence of some toxic elements, such as cadmium and strontium, should be monitored. Results of principal component analysis (PCA) and hierarchical cluster analysis (HCA) shown that the mineral composition, to a much greater extent, depended on the botanical origin of grains as compared to the production system.

AB  - The aim of this study was to examine the quality of real samples of drinking water, collected from the territory of the city of Požega and the surrounding rural areas. An analytical technique of inductively coupled plasma with optical emission spectrometry (ICP-OES) was used to determine the concentrations of macro-and microelements in water samples. The obtained results were compared with the maximum allowed concentrations of elements specified by the national Regulation on hygienic quality of drinking water, as well as the recommendations of the World Health Organization (WHO) and the US Environmental Protection Agency (EPA). The analysed waters were low-mineralized (<1000 mg/L), calcium waters, with low sodium content. The concentrations of all tested elements in the water samples were within the allowed values. There were obvious differences in chemical composition between surface water samples and groundwater samples. All tested waters can be safely used for irrigation, because the risk of soil salinization, sodium accumulation and harmful effects of boron on crops was assessed as insignificant.
AB  - Cilj ovog rada bio je ispitivanje kvaliteta realnih uzoraka vode za piće, prikupljenih sa teritorije grada Požege i okolnih seoskih naselja. Za određivanje koncentracije makro- i mikroelemenata u uzorcima vode korišćena je analitička tehnika induktivno kuplovana plazma sa optičkom emisionom spektrometrijom, ICP-OES. Dobijeni rezultati upoređivani su sa maksimalno dozvoljenim kocentracijama elemenata propisanim nacionalnim Pravilnikom o higijenskoj ispravnosti vode za piće, kao i preporukama Svetske zdravstvene organizacije (WHO) i Američke agencije za zaštitu životne sredine (EPA). Analizirane vode su malomineralizovane (<1000 mg/L), kalcijumskog tipa i sa niskim sadržajem natrijuma. Sadržaj svih ispitivanih elemenata u uzorcima vode bio je u granicama dozvoljenih vrednosti. Konstatovano je da postoje očigledne razlike u makro- i mikrokomponentnom hemijskom sastavu između uzoraka površinske vode i uzoraka podzemne vode. Ispitivane vode mogu bezbedno da se koriste u meliorativne svrhe, jer je rizik od zasoljavanja zemljišta, nagomilavanja natrijuma i štetnog uticaja bora na biljne kulture procenjen kao neznatan.

AB  - Pollen (floral or bee-collected) can be used as a good source of different nutrients including several important biogenic elements (minerals). The aim of this study was to determine content of selected biogenic elements (phosphorous, potassium, sulphur, calcium, magnesium, iron and zinc) in monofloral bee-collected pollen originated from sunflower (Helianthus annuus L.) plants grown in Serbia and to estimate its nutritional value regarding to elements content. In that purpose ICP-OES analytical method was applied. According to obtained results the examined pollen sample contains above mentioned elements in following quantities: P – 3523.98 mg/kg; K – 2869.13 mg/kg; S – 1951.74 mg/kg; Ca – 1919.20 mg/kg; Mg – 654.36 mg/kg; Fe –83.55 mg/kg; Zn – 45.92 mg/kg of dry weight. Based on recommended daily intakes for iron, phosphorus and zinc application of pollen, as food or food ingredient, will cover meaningful part of human needs for these three important elements.

AB  - The goal of this study is to evaluate the quality of seven natural mineral water sources in the Vrnjačka Banja area used in the treatment of various diseases. The 24 macro- and microelements were determined by inductively coupled plasma optical emission spectrometry (ICP-OES). The results show that element content was within allowed limits of concentration, except for B, As, and Se. The evaluated content of these elements can be associated with geological and anthropogenic factors. The sample S6 contains more than twice the concentration of As, meaning that the use of water from this source should be limited due to the negative impact of this element on human health. The calculated values of weekly (EWI) and oral (OI) intakes as well as the acute hazard quotient (HQA) of selected toxic and potentially toxic elements indicate no health risks to the consumers. The highest hazard quotient (HQL) observed for As in sample S6 (2.0·10−1) demonstrated a significant risk of carcinogenic diseases in long-term consumption from this source. The estimated non-carcinogenic (DIA) and carcinogenic (DIL) dermal intakes with acute (HQA) and long-term (HQL) hazard quotient values for sample S3 show that there is no health risk to those who use the water from this thermal source for bathing. The presence of aerobic mesophilic bacteria at 22 °C and 37 °C in samples S3, S6, and S7 as well as sulphite-reducing Clostridia species in sample S5 were detected, potentially indicating some non-faecal or faecal contamination.

AB  - Water is one of the most precious natural resources. The downtrend in the quality of lake water and pollution with heavy metals cause serious threats to the environment in last decades. Particularly vulnerable are the lakes that are located near towns and villages. The aim of this study was to investigate the physicochemical parameters and levels of macro– and microelements in order to determine the water quality of Lake Gruža in the summer period. The results showed that the studied parameters were within the permissible levels, except of concentrations of iron, cobalt and vanadium.
AB  - Voda predstavlja jedan od najdragocenijih prirodnih resursa. Opadanje kvaliteta jezerskih voda i zagađenje teškim metalima, predstavljaju ozbiljne pretnje za životnu sredinu u poslednjih nekoliko decenija. Posebno su ugrožena jezera koja se nalaze u blizini gradova i naselja. Cilj rada bio je ispitivanje osnovnih fizičko–hemijskih parametara i sadržaja makro– i mikroelemenata kako bi se utvrdio kvalitet vode jezera Gruža u letnjem periodu. Rezultati su pokazali da su ispitivani parametri u vodi bili u okviru dozvoljenih vrednosti, osim sadržaja gvožđa, kobalta i vanadijuma.

AB  - BACKGROUND: Bee pollen has already proved to be a good supplement rich in iron and zinc. Studies on the application of flower pollen in the food industry and medicine have begun. Bearing in mind the prevalence of maize as a crop culture, its pollen will be easily available. The mineral composition of pollen of seven Serbian maize hybrids was analyzed in order to establish its nutritional value and the benefits of its implementation in the human diet using the inductively coupled plasma method. RESULTSThe presence of twenty four different macro- (nine) and micronutrients (fifteen) was detected. The most common minerals were phosphorus and potassium, while arsenic, cobalt, lead, nickel and molybdenum were found in some samples. CONCLUSIONComparing the results obtained with recommended or tolerable dietary intake references for adults, it was found that maize pollen can be used as a very good source of zinc, iron, chromium and manganese for humans. With regard to selenium content, pollen samples proved to be moderately good source of this important micronutrient. Contents of some elements (Fe, Zn, Mn, Cr, Se, Al and V) showed significant differences depending on hybrid type. In some samples increased concentrations of aluminum and vanadium were recorded, which may pose a potential problem due to their toxicity.

In some samples increased concentrations of aluminum and vanadium were recorded, which may pose a potential problem due to their toxicity.",

AB  - The aim of this study was to evaluate the content of trace elements and physicochemical properties of water samples in the territories of southern Banat and Zemun (Serbia). The contents of twenty-two macro- and microelements were determined using ICP analysis. Prior to this, the typical parameters were evaluated using standard analytical methods. The contents of elements in all studied samples were within the maximum allowed concentrations established by national regulations on the water quality for human use of examined elements, except for Na, Fe, B, Mn, As and Co. The most of elevated metal concentrations were recorded in the samples from Zrenjanin area, with special emphasis on increased concentrations of arsenic. Besides, the higher concentrations of iron and manganese were found in samples S03 and S04, respectively. The increased concentrations of iron, arsenic and manganese in the samples from southern Banat area could be explained by the presence and reductive dissolution of some iron minerals in the subsurface which could contain As or Mn as trace elements. Increased concentration of boron could be the consequence of its leaching from ground caused by the adequate pH value. The obtained results indicate that geology of terrain might be the main cause of elevated concentrations of iron, boron, arsenic and manganese in the study region. Potential human weekly and long-term health risk was determined and expressed through exposure risk assessment. It has been found that only arsenic in sample S07 represents a great weekly risk. On the long-term basis, consumption of waters with elevated concentrations of boron/S05-08/ and manganese/S04, S07 and S08/ can be considered as high health risk. Our study indicates that both risk assessments need to be done, in order to better understand the real risk of increased concentrations of harmful elements on human health.

The most abundant elements were potassium, calcium, and magnesium. The samples were also exceptionally rich in iron and zinc, which are very important as nutrients. AB  - In the course of the pasteurization treatment of milk and dairy products the temperature of the technological process is kept at a constant value. The regulation of the temperature is carried out by means of technological water that comes from certain pools cooled to the temperature of 5ºC. the water heated in the process of pasteurization is sent back through steel pipes to the pool where it is cooled to the working temperature. the pools for water cooling are fitted with a bundle of pipes made of plain carbon steel that corrode over the time. the protection of pipes against corrosion is possible to be performed in two ways: by use of inhibitors and by cathodic protection. The application of either method depends on a number of factors. It is cheaper to protect new pipes from corrosion using inhibitors, whereas pipes already attacked by corrosion are more efficiently protected against further corrosion by applying the cathodic protection.
AB  - U toku postupka pasterizacije mleka i mlečnih proizvoda temperatura tehnološkog procesa održava se na konstantnoj temperaturi. Regulacija temperature se vrši pomoću tehnološke vode koja dolazi iz bazena rashlađena do temperature od 5°C. zagrejana voda iz procesa pasterizacije vraća se cevima u bazen gde se pomoću tečnog amonijaka hladi do radne temperature. U bazenima za hlađenje tehnološke vode nalazi se snop cevi od običnog čelika kroz koji prolazi tečni amonijak, a koje vremenom počinju da korodiraju. Zaštita cevi od korozije je moguća na dva načina: primenom određenih inhibitora korozije i primenom katodne zaštite. Koji će od ova dva načina da bude primenjen zavisi od više faktora. Za nove cevi je jeftinija zaštita od korozije primenom inhibitora. za cevi koje su već u upotrebi ili je kod njih počela korozija, primena katodne zaštite je efikasniji postupak dalje zaštite od korozije.
