AB  - BACKGROUND: Bee pollen has already proved to be a good supplement rich in iron and zinc. Studies on the application of flower pollen in the food industry and medicine have begun. Bearing in mind the prevalence of maize as a crop culture, its pollen will be easily available. The mineral composition of pollen of seven Serbian maize hybrids was analyzed in order to establish its nutritional value and the benefits of its implementation in the human diet using the inductively coupled plasma method. RESULTSThe presence of twenty four different macro- (nine) and micronutrients (fifteen) was detected. The most common minerals were phosphorus and potassium, while arsenic, cobalt, lead, nickel and molybdenum were found in some samples. CONCLUSIONComparing the results obtained with recommended or tolerable dietary intake references for adults, it was found that maize pollen can be used as a very good source of zinc, iron, chromium and manganese for humans. With regard to selenium content, pollen samples proved to be moderately good source of this important micronutrient. Contents of some elements (Fe, Zn, Mn, Cr, Se, Al and V) showed significant differences depending on hybrid type. In some samples increased concentrations of aluminum and vanadium were recorded, which may pose a potential problem due to their toxicity.

Effect of supplemental feeds on liver and intestine of common carp (Cyprinus carpio) in semi-intensive rearing system: Histological implications

AB  - In order to determine effects of different types of supplementary feed on the histology of liver and intestine of carp reared in a semi-intensive system, a six-month field experiment was carried out. Carp yearlings were fed different supplemental feeds: cereals (CF), pelleted (PF) and extruded (EF) compound feeds. Hepatocytes histomorphometry revealed larger nuclear profile area of EF-fed fish compared to other two groups, while cytoplasmic profile area of the hepatocytes decreased in following sequence: CF > EF > PF. Lower nucleus/cytoplasm ratio was found in CF-fed fish compared to EF-and PF-fed fish. Striking, season dependant finding, was that regardless of the type of supplementary feed the number of lipid droplets in hepatocytes was highest in July and August, lipid depletion occurred in September and October, while glycogen was present in hepatocytes throughout the study. No size difference between groups was observed for enterocytes height, absorptive surface height and number of goblet cells in tunica mucosa, but a strong relationship between length of intestinal folds and fish weight was found. Histological analysis revealed a difference among three types of supplemental feed used in this field study: extruded or steam-pelleted feed induced better nutritional status of common carp in comparison to cereals. At the same time, histomorphometry indicated some differences between EF-and PF-fed fish.

AB  - U poslednjih 20 godina zagađivanje slatkovodnih ekosistema toksičnim elementima je u porastu širom sveta. Zagađenjem su pogođeni pre svega izvori za vodosnabdevanje stanovništva i životno okruženje, ali i industrija kao i privreda uopšte. Međutim zbog perzistentnosti i transfera kroz lance ishrane i potencijalnog akumuliranja u ribama i drugim vodenim organizmima koji se koriste u ishrani, toksični elementi predstavljaju stalnu pretnju ljudskom zdravlju. Zagađivanje naših reka teškim metalima nameće pitanje ne samo zdravstvene ispravnosti riba iz reka već i riba iz ribnjaka obzirom da se većina šaranskih ribnjaka napaja vodom iz sistema kanala DTD. Cilj ove studije je bio da se analizira koncentracija 9 elemenata u zooplanktonu koji predstavlja značajnu prirodnu hranu šarana u poluintenzivnom sistemu gajenja. Istraživanje je obavljeno na 4 ribnjačka objekta, tokom dva ciklusa gajenja šarana, od juna do oktobra, na ribnjaku „Despotovo“. Uzorci zooplanktona za analizu elemenata su uzimani sa tri tačke u svakom jezeru pomoću planktonske mrežice veličine 250 µm jednom mesečno. Na ovaj način su sakupljene samo krupnije veličinske klase zooplanktona (Cladocera i Copepoda), koje šaranska mlađ najviše konzumira. Sa svakog jezera je uziman po još jedan uzorak zooplanktona za kvantitativnu i taksonomsku analizu. Koncentracija elemenata je analizirana induktivno spregnutom plazma masenom (ICP-MS) i optičkom emisionom spektrometrijom (ICP-OES). Rezultati su obrađeni jednofaktorijalnom analizom varijanse (ANOVA) u statističkom programu PAST 3.06. Značajnost razlika testirana je primenom Tukey’s post hoc testa. Podaci su klasifikovani na prolećni, letnji i jesenji aspekt tokom jednog proizvodnog ciklusa.Cladocera su dominirale u populaciji zooplanktona, osim u junu kada su Copepoda bile zastupljenije. Iako nije bilo značajnih razlika u koncentraciji elemenata između godina, osim za Cu i Sr, uočen je karakterističan sezonski obrazac kretanja koncentracija elemenata tokom celog istraživanja. Prolećni i jesenji aspekti u 2012 su bili veći nego u 2013, dok je letnji aspekt u 2013 bio viši nego u 2012. godini.  Izuzetak je bila koncentracija Zn u zooplanktonu gde je situacija bila obrnuta. Povišene vrednosti većine toksičnih metala u zooplanktonu na ribnjaku Despotovo se mogu objasniti relativno velikim afinitetom egzoskeleta Cladocera za većinu dvovalentih jona. Nakon adsorbcije elementi na površini ljuštura ovih životinja, tokom vremena bivaju absorbovani kroz telesni zid u unutrašnje organe. Neke studije čak navode da površinski akumulirani kontaminanti na plenu mogu biti dostupniji predatorima od onih akumuliranih u tkivima, zbog niskog pH i visokog nivoa jonske kompleksacije koji vladaju na mestu abstorpcije, u digestivnom traktu većine životinja,  Ovi rezultati nameću zaključak da je u budućim istraživanjima kontaminacije vodenih ekosistema i riba poželjno uključiti analize ne samo vode kao izvora toksičnih elemenata, već i odgovarajućih izvora hrane (plena) koji, kako je pokazano, sadrži potencijal ne samo za značajnu akumulaciju elemenata već i njihovu potencijalnu veću biodostupnost konzumentima.

AB  - In this study, calcium alginate beads immobilizing D-limonene (solid systems) have been manufactured starting from emulsions of this flavor in sodium alginate (liquid systems). The effects of alginate concentration (0.02 and 0.03 g/mL) and flavor content (5 and 10 % w/w) on viscosity, conductivity and stability of emulsions were investigated. The flavor droplets in emulsions are bigger as polymer solution is more concentrated and contains more of the flavor. When emulsions have been subjected to electrostatic extrusion and upon Na+-Ca2+ ion exchange, smaller (similar to 960 to similar to 1450 mm) and less spherical beads were obtained (sphericity factor 0.003-0.21) compared to beads produced by simple dripping technique (without electrostatic field). When wet beads were air dried, they shrunk less if they had higher content of the flavor. Novel mathematical model describing swelling kinetics of dried beads is developed. In this work, D-limonene was efficiently immobilized within Ca-alginate beads (immobilization efficiency similar to 50 to similar to 77%) and its thermal stability was confirmed by TG/MS analysis.

AB  - The methanolic extract of the wild edible mushroom Cantharellus cibarius Fr. (chanterelle) was analyzed for in vitro antioxidative, cytotoxic, antihypertensive and antibacterial activities. Various primary and secondary metabolites were found. Phenols were the major antioxidant components found in the extract (49.8 mg g(-1)), followed by flavonoids, whose content was approximately 86% of the total phenol content. Antioxidant activity, measured by four different methods, was high for inhibition of lipid peroxidation (EC50 = 1.21 mg mL(-1)) and chelating ability (EC50 = 0.64 mg mL(-1)). The antioxidant activity of the C. cibarius methanol extract was achieved through chelating iron compared to hydrogen atom and/or electron transfer. The extract showed good selectivity in cytotoxicity on human cervix adenocarcinoma HeLa, breast carcinoma MDA-MB-453 and human myelogenous leukemia K562, compared to normal control human fetal lung fibroblasts MRC-5 and human lung bronchial epithelial cells BEAS-2B. The extract had inhibitory activity against angiotensin converting I enzyme (ACE) (IC50 = 0.063 mg mL(-1)). The extract revealed selective antimicrobial activity against Gram-positive bacteria with the highest potential against E. faecalis. The medicinal and health benefits, observed in wild C. cibarius mushroom, seem an additional reason for its traditional use as a popular delicacy food.

AB  - Partially purified polysaccharides (FP) and hot alkali extract (FNa) obtained from fruiting bodies of the wild basidiomycete Grifola frondosa were examined for their antimicrobial, antioxidant and cytotoxic activity. The structural properties of FP and FNa samples were investigated by FT-IR and high resolution 1H- and 13C-NMR spectroscopy. From a group of various G- and G+ bacteria the antibacterial effects were highest against the G + B. cereus. FNa was the better antioxidant shown by the lower EC50 values of DPPH scavenging ability, ferric-reducing antioxidant power and ferrous ion-chelating ability. Ferric-reducing antioxidant power and ferrous ion-chelating ability were mostly linked to total polysaccharides, total- and beta-glucan content, as well as total protein content. Both extracts displayed a moderate dose dependent antiproliferative action towards malignant human breast cancer MDA-MB-453, cervical adenocarcinoma HeLa and myelogenous leukemia K562 cells not observed in the non cancer derived MRC-5 fibroblasts. The highest effect was found in HeLa cells for FP extract. The mean diameter of Ca-alginate bead loading FP was 960.7 mu m while the mean diameter of beads encapsulating FNa extract was 1051.7 mu m.

AB  - Oxidative stress caused by an imbalanced metabolism and an excess of reactive oxygen species (ROS) lead to a range of health disorders in humans. Our endogenous antioxidant defense mechanisms and our dietary intake of antioxidants potentially regulate our oxidative homeostasis. Numerous synthetic antioxidants can effectively improve defense mechanisms, but because of their adverse toxic effects under certain conditions, preference is given to natural compounds. Consequently, the requirements for natural, alternative sources of antioxidant foods identified in edible mushrooms, as well as the mechanistic action involved in their antioxidant properties, have increased rapidly. Chemical composition and antioxidant potential of mushrooms have been intensively studied. Edible mushrooms might be used directly in enhancement of antioxidant defenses through dietary supplementation to reduce the level of oxidative stress. Wild or cultivated, they have been related to significant antioxidant properties due to their bioactive compounds, such as polyphenols, polysaccharides, vitamins, carotenoids and minerals. Antioxidant and health benefits, observed in edible mushrooms, seem an additional reason for their traditional use as a popular delicacy food. This review discusses the consumption of edible mushrooms as a powerful instrument in maintaining health, longevity and life quality.

abstract = "Oxidative stress caused by an imbalanced metabolism and an excess of reactive oxygen species (ROS) lead to a range of health disorders in humans. Our endogenous antioxidant defense mechanisms and our dietary intake of antioxidants potentially regulate our oxidative homeostasis. Numerous synthetic antioxidants can effectively improve defense mechanisms, but because of their adverse toxic effects under certain conditions, preference is given to natural compounds. Consequently, the requirements for natural, alternative sources of antioxidant foods identified in edible mushrooms, as well as the mechanistic action involved in their antioxidant properties, have increased rapidly. Chemical composition and antioxidant potential of mushrooms have been intensively studied. Edible mushrooms might be used directly in enhancement of antioxidant defenses through dietary supplementation to reduce the level of oxidative stress. Wild or cultivated, they have been related to significant antioxidant properties due to their bioactive compounds, such as polyphenols, polysaccharides, vitamins, carotenoids and minerals. Antioxidant and health benefits, observed in edible mushrooms, seem an additional reason for their traditional use as a popular delicacy food. This review discusses the consumption of edible mushrooms as a powerful instrument in maintaining health, longevity and life quality.",

AB  - From the aerial parts of Atriplex littoralis, three new flavonoid glycosides named atriplexins I-III (1-3), a known flavonoid glycoside, spinacetin 3-O-beta-D-glucopyranoside (4), arbutin (5), and 4-hydroxybenzyl-beta-D-glucopyranoside (6) were isolated. Their structures were elucidated on the basis of detailed spectroscopic analysis, including ID and 2D NMR (COSY, NOESY, TOCSY, HSQC, HMBC) and HRESITOF MS data. The compounds were tested for in vitro protective effects on chromosome aberrations in peripheral human lymphocytes using a cytochalasin-B-blocked micronucleus (MN) assay in a concentration range of 0.8-7.4 mu M of final culture solution. Chromosomal damage was induced by 2 Gy of gamma-radiation on binudeated human lymphocytes, and the effects of the compounds were tested 2 to 19 h after irradiation. The frequency of micronuclei (MNi) was scored in binudeated cells, and the nuclear proliferation index was calculated. The highest prevention of in vitro biochemical and cytogenetic damage of human lymphocytes induced by gamma-radiation was exhibited by 3 (reduction of MN frequency by 31%), followed by 4 and 6.

Screening inland halophytes from the central Balkan for their antioxidant activity in relation to total phenolic compounds and flavonoids: Are there any prospective medicinal plants?

AB  - This paper presents new data for secondary metabolites and biological activity of the insufficiently studied European inland halophytes as remarkable indicators of Balkan saline habitats. Phenolic content, flavonoid concentrations and antioxidant activity were analyzed in fifteen terrestrial salt tolerant plants collected from eight saline habitats situated in two distinct semiarid regions of Serbia. Total phenols ranged from 31.86 to 212.71 mg of GA/g of extract (gallic acid equivalent milligrams of gallic acid per gram of extract). Concentration of flavonoids ranged from 41.21 to 146.06 mg of RU/g of extract (rutin equivalent milligrams of rutin per gram of extract). Antioxidant activity was determined using 1,1-dipheny1-2-picrylhydrazyl radical reagent; obtained values was ranged from 1785.81 to 17.55 mu g/ml. A significant relation was noticed between the concentration of phenols and antioxidant activity. Parallel to the analysis of researched halophytes, Camellia sinensis and Ginkgo biloba were analyzed for comparison. The best antioxidant properties were determined for Statice gmelinii, Artemisia santonicum and Mentha pulegium. The results indicate a potential of studied halophytic species as candidates for natural sources of secondary metabolites with high biological activity, whereas their bioactive compounds might have a significant role in adaptations to salt and drought stress.

AB  - Polysaccharides of the European strain of A. brasiliensis were obtained by hot water extraction and ethanol precipitation (HWPE I) of fruiting bodies, and further purified by dialysis (HWPE II) and pronase incubation (PPE). These polysaccharides consisted mainly of (1 -> 6)-beta-D-glucans. PPE was free of proteins and polyphenols as demonstrated by quantitative assays and NMR profiling. They showed a clear IFN-gamma inducing activity in human PBMCs, which suggests these polysaccharides to have proinflammatory effects. Treatment by beta-glucosidase caused the polysaccharides to be degraded into smaller fragments and at the same time increased their IFN-gamma inducing activity in PBMCs fourfold. In vitro, PPE showed a dose-dependent inhibition of the proliferation of the human leukemia Jurkat cell. At 100 mu g/mL the cells' viability was decreased by appr. 51% compared to the control. EPR spin trapping demonstrated a high antioxidative activity against (OH)-O-center dot and (center dot)O2(-) radicals of HWPE land PPE. Further, the results of the antioxidant assays indicated that antioxidant activity against (OH)-O-center dot radicals in the Fenton system was achieved through scavenging or through chelating iron mechanisms. The good immunomodulating and antioxidative properties of A. brasiliensis polysaccharide extract obtained by hot water extraction and ethanol precipitation make it suitable for everyday use as an inexpensive dietary supplement.

AB  - The fungal polysaccharides attract a lot of attention due to their multiple challenging biological properties, such as: anti-tumor, anti-viral, anticomplementary, anticoagulant, hypolipidemic, immunomodulatory and immune-stimulatory activities, which all together make them suitable for application in many quite distinctive areas, such as food industry, biomedicine, cosmetology, agriculture, environmental protection and waste water management. This article presents results with respect to biological properties, structure and procedures related to the isolation and activation of polysaccharides of higher fungi. It is considered and presented along with a review of the critical antioxidative activity and possible influence of the structural composition of polysaccharide extracts (isolated from these higher fungi) upon their antioxidative properties.
