AB - The use of truffles in food is based mainly on the addition of artificial flavors, aiming to achieve an intense aroma in the products. As truffle is a natural product with nutritional and functional properties, it is important to find an optimal method for truffle storage. As the microbiota contribute to truffle aroma, the bacterial and yeast compositions in the rhizosphere and fruiting body of the truffle and the impact of different freezing methods on the volatile profile of the truffle Tuber aestivum during 90 days of the storage were determined. Bacteria and yeasts isolates were identified using 16s rRNA and 18s rRNA. The effect of freezing truffles at -20°C and -80°C with and without previous dipping in liquid N2 on the volatile compounds was observed using GC/MS. The results demonstrated that the isolated bacteria belonged to the phylum Proteobacteria, Firmicutes and Actinobacteria, and the identified species mainly belonged to Firmicutes, genus Bacillus sp. Isolated yeasts were identified as Cryptococcus sp., Debaromyces hanseinii, Candida fermentati and Rhodotorula mucilaginosa. The GC/MS analysis revealed that frozen truffle samples were richer in the compounds 2-butanone, 2-methyl-butanal, methanethiol and 2-butanol after freezing or during storage. The content of DMS, acetaldehyde, 3-octanone, ethanol, and 2-methyl-1-propanol significantly decreased immediately after freezing. Overall, the gained results indicated that freezing of truffles as a preservation method had profound effects on the volatile compounds, while previous dipping in liquid N2 showed no significant impact on the volatile profile of truffle Tuber aestivum.

AB - In this study we have reported the chemical composition of the essential oils obtained from the needles of twelve Pinus taxa, belonging to the subgenera Pinus (sections Pinus and Trifoliae) and Strobus (sect. Quinquefoliae). Monoterpenes dominated over sesquiterpenes in most of the investigated taxa of both subgenera, except in representatives of the subsection Pinaster, subgenus Pinus. α-Pinene was the most abundant terpene in eight pines, but other dominant terpenes were found in some taxa - trans-caryophyllene, germacrene D, abietadiene and β-pinene. In the subsect. Pinaster, the most dominant compounds varied from species to species. In addition, P. halepensis and P. pinaster had the highest percentage of diterpenes, while P. heldreichii was the richest in germacrene D. In the PCA and cluster analyses, three species from the subsect. Pinaster emerged as the most distant: P. halepensis, P. pinaster, and P. heldreichii. In addition, the possible taxonomic implications of the terpene profile in the analysed Pinus taxa were also discussed.
AB - U ovom proučavanju objavili smo hemijski sastav etarskih ulja dobijenih iz iglica 12 taksona roda Pinus, koji pripadaju podrodovima Pinus
(sekcije Pinus i Trifoliae) i Strobus (sekcija Quinquefoliae).
trans-kariofilen, germakren D, abietadien i β-pinen. U subcekciji Pinaster dominantne komponente variraju od vrste do vrste. Nadalje, P. halepensis
i P. pinaster imaju najveći procenat diterpena, dok je P. heldreichii najbogatiji u germakrenu D. U PCA i klaster analizama pokazale su
se najudaljenije tri vrste subsekcije Pinaster: P. halepensis, P. pinaster i P. heldreichii. Nadalje, u analiziranim vrstama roda Pinus diskutovane
su moguće taksonomske implikacije terpenskog profila.

AB - The most abundant volatile compounds of sweet wormwood (Artemisia annua L.) essential oil were artemisia ketone (25.4 %) and trans-caryophyllene (10.2 %), followed by 1,8-cineole, camphor, germacrene D and β-selinene. The major volatile compounds in the hydrosol were camphor (25.1 %), 1,8-cineole (20.5 %) and artemisia ketone (10.7 %), followed by trans-pinocarveol and yomogi alcohol. Tested essential oil was rich in oxygenated monoterpenes and sesquiterpene hydrocarbons, while the former were identified as the major class of volatile compounds in the hydrosol, due to higher water solubility. Classification of all sweet wormwood chemotypes, according to essential oil composition, in available literature (17 studies and 61 accessions) could be done according to four chemotypes: artemisia ketone+artemisia alcohol (most abundant), artemisia ketone, camphor and nonspecific chemotype. According to this classification, essential oil of sweet wormwood from this study belongs to artemisia ketone (content varied between 22.1 and 55.8 %). Bearing in mind that hydrosols are a by-product of industrial production of essential oils, and the fact that sweet wormwood hydrosol has high contents of camphor, 1,8-cineole and artemisia ketone, there is a great potential for the use of this aromatic plant primary processing waste product as a water replacement in cosmetic industry, beverages flavoring, for food preservation, as well as in post-harvest pre-storage treatments in organic agriculture.

AB - Lavandula sp. essential oil and hydrolate are commercially valuable in various industry
branches with the potential for wide-ranging applications. This study aimed to evaluate the quality
of these products obtained from L. x intermedia cv. ‘Budrovka’ for the first time cultivated on Fruška
Gora Mt. (Serbia) during three successive seasons (2019, 2020, and 2021). Essential oil extraction
was obtained by steam distillation, and the composition and influence of weather conditions were
also assessed, using flowering tops. The obtained essential oils and hydrolates were analysed by
gas chromatography with a flame ionization detector (GC-FID) and gas chromatography coupled to
mass spectrometry (GC-MS). A linear regression model was developed to predict L. x intermedia cv.
‘Budrovka’ essential oil volatile compound content and hydrolate composition during three years,
according to temperature and precipitation data, and the appropriate regression coefficients were
calculated, while the correlation analysis was employed to analyse the correlations in hydrolate
and essential oil compounds. To completely describe the structure of the research data that would
present a better insight into the similarities and differences among the diverse L. x intermedia cv.
‘Budrovka’ samples, the PCA was used. The most dominant in L. intermedia cv. ‘Budrovka’ essential
oil and hydrolate were oxygenated monoterpenes: linalool, 1,8-cineole, borneol, linalyl acetate, and
terpinene-4-ol. It is established that the temperature was positively correlated with all essential oil
and hydrolate compounds. The precipitations were positively correlated with the main compounds
(linalool, 1,8-cineole, and borneol), while the other compounds’ content negatively correlated to

abstract = "Lavandula sp. essential oil and hydrolate are commercially valuable in various industry
branches with the potential for wide-ranging applications.
(linalool, 1,8-cineole, and borneol), while the other compounds’ content negatively correlated to
precipitation. The results indicated that Fruška Gora Mt. has suitable agro-ecological requirements
for cultivating Lavandula sp. and providing satisfactory essential oil and hydrolate.",

AB - Ecological conditions of the growing areas, growing practices as well as harvest and postharvest processing influence the yield and quality of chamomile. The aim of this research was to determine the influence of chamomile separation methods, as postharvest treatments, on the essential oil quality and content, with a view to improve current primary processing of this valuable medicinal plant. In order to explain the structure of laboratory data that would give deeper assessment of similarities among various samples of chamomile essential oil, PCA was employed. Tested results showed that separation of chamomile plant material, as postharvest and pre-drying treatment, had significant influence on the number of identified compounds in the chamomile essential oil. The highest content of individual essential oil compounds had chamomile flowers with short stems, especially α-bisabolol, chamazulene, Z-spiroether and E-β-farnesene. In the essential oil obtained from chamomile flowers with long stems, content of α-bisabolol and chamazulene were significantly lower, while E-β-farnesene and Z-spiroether contents were significantly higher. Furthermore, in the essential oil obtained from chamomile plant material without separation, the lowest content of αbisabolol and Z-spiroether, and the highest content of E-β-farnesene were recorded. The correlation analysis was performed to investigate the likeness in the amounts of the active compounds of essential oil from differently processed chamomile samples. All these results indicate the importance of precise and controlled postharvest treatments, since it clearly affects the essential oil quality and content in the primary processing of this valuable medicinal plant.

AB - Chamomile (Matricaria chamomilla L., Asteraceae) is one of the most popular medicinal plants used as a herb
infusion for treating numerous ailments, including sleep disorders, anxiety, digestion and intestinal conditions
etc. Chamomile essential oil is used in a wide variety of consumer goods such as detergents, soaps, toiletries,
cosmetics, pharmaceuticals, perfumes, confectionery food products, soft drinks, distilled alcoholic beverages
(hard liquor) and as insecticide. According to the European Pharmacopoeia, there are two types of essential
oils, one rich in bisabolol oxides and the other in α-bisabolol, which are preferred for tea brewing because of
its sweet, grassy, and slightly fruity aroma. From the other side, varieties rich in chamazulene and β-farnesene
have bitter taste, and because of that they are low valuable raw material. According to the results of the
essential oil composition obtained from three different chamomile samples grown in Province of Vojvodina, it
could be concluded that domestic cultivars “Banatska” and “Tetraploidna” contains β-farnesene as dominant
compound, while the content of bisabolol oxides and α-bisabolol was lower than required standards in
European Pharmacopoeia. Because of that they could not be classified as quality raw material. The German
cultivar “Mabamille” grown in agroecological conditions of Vojvodina region, with 37.5% of α-bisabolol can be
classified as a bisabolol rich type, and as high quality row material.

AB - Oregano is one of the most used culinary herb and it is often adulterated with cheaper plants. In this study, GC–MS was used for identification and quantification of metabolites from 104 samples of oregano (Origanum vulgare and O. onites) adulterated with olive (Olea europaea), venetian sumac (Cotinus coggygria) and myrtle (Myrtus communis) leaves, at five different concentration levels. The metabolomics profiles obtained after the two-step derivatization, involving methoxyamination and silanization, were subjected to multivariate data analysis to reveal markers of adulteration and to build the regression models on the basis of the oregano-to-adulterants mixing ratio. Orthogonal partial least squares enabled detection of oregano adulterations with olive, Venetian sumac and myrtle leaves. Sorbitol levels distinguished oregano samples adulterated with olive leaves, while shikimic and quinic acids were recognized as discrimination factor for adulteration of oregano with venetian sumac. Fructose and quinic acid levels correlated with oregano adulteration with myrtle. Orthogonal partial least squares discriminant analysis enabled discrimination of O. vulgare and O. onites samples, where catechollactate was found to be discriminating metabolite.
У овој студији, гаснa хроматографијa–масенa спектро- метријa коришћена је за идентификацију и квантификацију метаболита из 104 узорка оригана (Origanum vulgare и O. onites) кривотвореног маслином (Olea europea), венеци- јанским сумаком (Cotinus coggygria) и миртом (Myrtus communis), у пет различитих концентрација.

AB - In insects, cuticular hydrocarbon (CHC) profile is involved in many important biological functions and may vary in different conditions. Among fruit fly species, Drosophila subobscura is one of the most frequently used in genetic, ecological and evolutionary research, because of its rich chromosomal polymorphism, specific behavioral repertoires and habitat preferences. In this work, we identified and quantified cuticular chemoprofile of D. subobscura. Using gas chromatography (GC) and gas chromatography coupled with mass spectrometry (GC-MS), 25 chemical compounds were found in males and 23 compounds were found in females. Further, ANOVA confirmed significant sexual dimorphism in cuticular chemoprofile amounts. Knowledge of cuticular chemistry could contribute to further research in D. subobscura, starting from behavioral, up to ecological, since this species is recognized as an important model system for the study and monitoring of global climate changes.

AB - Terpene compounds of Tanacetum macrophyllum as 1) essential oils, obtained by hydrodistillation (HD), 2) essential oil extracts, obtained by simultaneous' hydrodistillation and extraction (SDE) and 3) volatiles, obtained by Static Headspace GC-MS analysis (HS) were processed. Monoterpenes were the most dominant (49.2%, 49.5% and 90.4%, respectively). Profiles of essential oils obtained by HD and SD were quite similar, with oxygenated monoterpenes (39.3% and 39.4%) being the most abundant. In HS volatiles oxygenated monoterpenes also dominated (57.4%). Total sesquiterpenes were abundant in HD and SDE volatiles (38.2% and 39.2%, resp.), where sesquiterpene hydrocarbons were prevalent (27.3% and 28.7%, resp.). Germacrene D was dominant in HD and SDE oils (22.0% and 23.3%, resp.) and 1,8-cineole in HS volatiles (34.3%). To our knowledge, this is the first use of Headspace technique on T macrophyllum. Furthermore, this is the first comparison of different techniques of volatile extraction in T. macrophyllum.

AB - Simultaneous hydrodistillation and extraction of Pinus cembra needles from Slovakia was done (via Likens Nickerson apparatus) for the first time. In essential oil extracts 55 compounds were identified, comprising 99.6% of the extract. The most abundant were monoterpene hydrocarbons (71.0%). In the terpene profile alpha-pinene, limonene/beta-phellandrene, germacrene D, beta-pinene, and delta-cadinene dominated (53.2%, 11.4%, 9.4%, 4.6%, and 4.3%, respectively). Seven new compounds for P. cembra, such as methyl daniellate (0.5%), 1,8 cineole (0.2%) and trans-cadina-1(6),4-diene (0.2%), etc. were found. In needle cuticular wax of P. cembra the amount of nonacosan-10-ol was 75.8%. n-Alkanes ranged from C-20 to C-35 with the most dominant C-31, C-29 and C-33 (33.4%, 16.9%, and 9.6%, resp.). Differences in terpene profiles between Slovakian and Greece from one side and Romanian and Polish cembran pines on the other side could be the consequence of its disjuncted areal in Carpathian Mountains caused by glaciation and survival of species in different ecological niches. Obtained differences in n-alkane profiles among our and literature results could be the consequence of different age of trees.

AB - Chamomile (Matricaria chamomilla L. syn. Chamomilla recutita (L.) Rauschert) is a herb widely used in the form of dried flower heads (Matricariae flos) infusion tea and steam-distilled essential oil (Matricariae aetheroleum). The subject of this study is to determine the chemical composition of essential oil obtained from dry chamomile flowers of three tetraploid cultivars (Zloty Lan', Manzana' and Lutea') grown in North Banat region, Serbia. Essential oil has been obtained by hydrodistillation process on Clevenger apparatus. Qualitative and quantitative composition of the oil was determined by GC-MS and GC-FID analysis. From 48 compounds detected in total, the most abundant class was sesquiterpene hydrocarbons. In Zloty Lan' and Lutea' the major compound was trans--farnesene while in Manzana' it was -bisabolol.

AB - Parsley (Petroselinum crispum L.), celery (Apium graveolens L.), celeriac (Apium graveolens var. rapaceum), carrot (Daucus carota L.), parsnip (Pastinaca sativa L.), lovage (Levisticum officinale Koch.) and angelica (Angelica archangelica L.) are vegetable plants belonging to the Apiaceae family. They are often used as spices due to their characteristic aroma, originating from the volatile compounds present in the plant tissues. Mainly, all parts of the plant i.e. roots, leaves and fruit are used in nutrition. However, the focus of this chapter is plant fruit (i.e. seed), which is mostly used as spice. The contemporary method used for the analysis of volatiles compounds is called headspace and it is widely applied in flavor chemistry. The dominant compounds in P. crispum are α-pinene (46.2-49.0%) and β-pinene (33.5- 35.4%), while in A. graveolens, it is limonene (84.1-94.4%). In D. carota, the main components are sabinene (28.3%) and α-pinene (25.0%), while in P. sativa fruit, it is octyl ester of butanoic acid (53.8%) and 1-octanol (27.6%). In L. officinale and A. archangelica, the dominant component in fruit is β-phellandrene (77.1% and 84.7%, respectively).

AB - Cave animals live under highly constant ecological conditions and in permanent darkness, and many evolutionary adaptations of cave-dwellers have been triggered by their specific environment. A similar "cave effect" leading to pronounced chemical interactions under such conditions may be assumed, but the chemoecology of troglobionts is mostly unknown. We investigated the defensive chemistry of a largely cave-dwelling julid group, the controversial tribe "Typhloiulini", and we included some cave-dwelling and some endogean representatives. While chemical defense in juliform diplopods is known to be highly uniform, and mainly based on methyl- and methoxy-substituted benzoquinones, the defensive secretions of typhloiulines contained ethyl-benzoquinones and related compounds. Interestingly, ethyl-benzoquinones were found in some, but not all cave-dwelling typhloiulines, and some non-cave dwellers also contained these compounds. On the other hand, ethyl-benzoquinones were not detected in troglobiont nor in endogean typhloiuline outgroups. In order to explain the taxonomic pattern of ethyl-benzoquinone occurrence, and to unravel whether a cave-effect triggered ethyl-benzoquinone evolution, we classed the "Typhloiulini" investigated here within a phylogenetic framework of julid taxa, and traced the evolutionary history of ethyl-benzoquinones in typhloiulines in relation to cave-dwelling. The results indicated a cave-independent evolution of ethyl-substituted benzoquinones, indicating the absence of a "cave effect" on the secretions of troglobiont Typhloiulini. Ethyl-benzoquinones probably evolved early in an epi- or endogean ancestor of a clade including several, but not all Typhloiulus (basically comprising a taxonomic entity known as "Typhloiulus sensu stricto") and Serboiulus. Ethyl-benzoquinones are proposed as novel and valuable chemical characters for julid systematics.

AB - Cuticular hydrocarbons (CHCs) in Drosophila melanogaster represent the basis of chemical communication being involved in many important biological functions. The aim of this study was to characterize chemical composition and variation of cuticular profiles in five D. melanogaster strains. These strains were reared for approximately 300 generations on five diets: standard cornmeal medium and substrates prepared with apple, banana, tomato, and carrot. Differences in quantity and/or quality in CHCs were assumed as a result of activation of different metabolic pathways involved in food digestion and adaptations to the particular diet type. In total, independently of sex and strain, 66 chemical compounds were identified. In females of all strains, 60 compounds were identified, while, in males, 47 compounds were extracted. Certain new chemical compounds for D. melanogaster were found. MANOVA confirmed that CHC amounts significantly depend on sex and substrates, as well as on their interactions. Discriminant analysis revealed that flies belonging to apple' and carrot' strains exhibited the most noticeable differences in CHC repertoires. A non-hydrocarbon pheromone, cis-vaccenyl acetate (cVA) also contributed to the variation in the pheromone bouquet among the strains. Variability detected in CHCs and cVA may be used in the explanation of differences in mating behaviour previously determined in analyzed fly strains.

AB - This is the first report of population variability of the contents of n-alkanes and nonacosan-10-ol in the needle epicuticular waxes of Serbian spruce (Picea omorika). The hexane extracts of needle samples originated from three natural populations in Serbia (Vranjak, Zmajevaki potok, and Mileevka Canyon) were investigated by GC and GC/MS analyses. The amount of nonacosan-10-ol varied individually from 50.05 to 74.42% (65.74% in average), but the differences between the three investigated populations were not statistically confirmed. The results exhibited variability of the composition of n-alkanes in the epicuticular waxes with their size ranging from C18 to C35. The most abundant n-alkanes were C29, C31, and C27 (35.22, 13.77, and 12.28% in average, resp.). The carbon preference index of all the n-alkanes (CPItotal) of the P. omorika populations (average of populations IIII) ranged from 3.3 to 11.5 (mean of 5.9), while the average chain length (ACL) ranged from 26.6 to 29.2. The principal component and cluster analyses of the contents of nine n-alkanes showed the greatest difference for the population growing in the Mileevka Canyon. The obtained results were compared with previous literature data given for other Picea species, and this comparison was briefly discussed.

AB - This is the first report on population variability of nonacosan-10-ol and n-alkanes in needle epicuticular waxes of Macedonian pine (Pinus peuce Griseb.) Hexane extracts of needle samples, originating from two natural populations in Montenegro (Zeletin and Sjekirica) and from one population in Serbia (Mokra Gora) were analyzed by gas chromatography (GC) and gas chromatography/mass spectrometry (GC/MS). The amount of nonacosan-10-ol varied individually from 41.3 to 72.31% (average 55.9%), with the Sjekirica population being statistically divergent (64.4% on average). The results showed n-alkanes in epicuticular waxes ranging from C18 to C33. The most abundant alkanes were C29, C25, C27, and C23 (15.5, 11.1, 10.6, and 10.5% on average, resp.). The carbon preference index of Pinus peuce ranged from 1.0 to 4.3 (1.9 on average). Average chain length ranged from 18.4 to 27.7 (average 25.7). A high level of inidividual quantitative variation in all of these hydrocarbon parameters was also detected. These results were compared with published data on other species from the Pinus genus.

AB - This is the first report of individual variability and population diversity of the contents of nonacosan-10-ol and n-alkanes in the needle cuticular waxes of Bosnian pines originated from Montenegro, regarded as Pinus heldreichii var. leucodermis, and from Serbia, regarded as P. heldreichii var. pancici. The amount of nonacosan-10-ol varied individually from 27.4 to 73.2% (55.5% in average), but differences between the four investigated populations were not statistically confirmed. The size of the n-alkanes ranged from C18 to C33. The most abundant n-alkanes were C23, C27, and C25 (12.2, 11.2, and 10.8% in average, resp.). The carbon preference index (CPI) of the n-alkanes ranged from 0.8 to 3.1 (1.6 in average), while the average chain length (ACL) ranged from 20.9 to 26.5 (24.4 in average). Long-chain and mid-chain n-alkanes prevailed (49.6 and 37.9% in average, resp.). It was also found that the populations of P. heldreichii var. leucodermis had predominantly a narrower range of n-alkanes (C18?C31) than the trees of the variety pancici (C18?C33). Differences between the varieties were also significant for most of the other characteristics of the n-alkane pattern (e.g., most abundant n-alkanes, CPI, ACL, and relative proportion of short-, mid-, and long-chain n-alkanes). The principle component and cluster analyses of eleven n-alkanes confirmed the significant diversity of these two varieties.

AB - This is the first report of n-alkanes in needle epicuticular waxes of the variety Bosnian pine, Pinus heldreichii var. pančići. n-Hexane extracts of needle samples, originating from seven isolated localities in Serbia, were analysed by gas chromatography (GC) and gas chromatography-mass spectrometry (GC-MS). The results evidenced n-alkanes ranging from C18 to C33 in epicuticular waxes. The most abundant alkanes were C27, C23, C25 and C29 (12.53 %, 12.46 %, 12.00 % and 10.38 % on average, respectively). The carbon preference index (CPItotal) of Pinus heldreichii var. pančići ranged from 1.1 to 2.1 (1.6 on average), while the average chain length (ACLtotal) ranged from 25.0 to 25.8 (25.3 on average). A high level of individual quantitative variation in all of these hydrocarbon parameters was also found. The obtained results were compared with the bibliographic references for Pinus heldreichii var. leucodermis and other species of the Pinus genus.
