Levels of toxic elements in canned fish from the Serbian markets and their health risks assessment

AB  - A total of 138 samples of canned tuna, sardines and mackerel from the Serbian market were analyzed for toxic (As, Cd, Pb, Hg) element levels using ICPMS. The highest average contents of toxic elements were found to be 1.70 mg kg(-1) for arsenic and 0.026 mg kg(-1) for cadmium in sardine and 0.068 mg kg(-1) for mercury in tuna. The lead content was very similar (similar to 0.048 mg kg(-1)) of the three types of canned fish. None of the fish analyzed contained toxic elements in levels exceeding the maximum allowable levels currently in force. Human health risk assessment of As, Cd, Pb and Hg in canned fish were investigated. A risk assessment based on the measured levels of examined elements indicated that consumption of canned fish according to current eating habits in Serbia presents little risk to human health since the carcinogenic risk is within the acceptable range, 10(-4)-10(-6).

Lipids and glutathione - dependent enzymes in the pig neck

AB  - A pig neck is meat predominantly used for barbecues and the amount of lipids and cholesterol in relation to the activities of lipid peroxide reducing enzymes is important also for the prevention of oxysterol formation during a thermal preparation. We examined lipid peroxide reducing enzymes activities in the pig neck as well as the amount of lipids and cholesterol. We found high activity of both selenium-dependent glutathione peroxidase (GSH-Px; EC 1.11.1.9) and glutathione eductase (GR; EC 1.6.4.2) enzymes in the pig neck as well as high content of lipids and cholesterol. Our results are discussed in relation to the balance between synthesis, oxidation, and intracellular transport of fatty acids in muscles as the main factor responsible for muscle lipid content variations in animals undergoing a normal growth.

AB  - Pigs' neck meat is predominantly used for barbecues. In order to prevent oxysterols formation during thermal preparation, it is important to be aware of the content of fats, cholesterol and the activity of lipid peroxide reducing enzymes. We examined the activities of lipid peroxide reducing enzymes in the pigs' neck meat, glutathione peroxidase (GSH-Px; EC 1.11.1.9), glutathione reductase (GR; EC 1.6.4.2) as well as lipids and cholesterol content. Investigations showed high activity of both glutathione-dependent enzymes (GSH-Px and GR) in the pigs' neck meat as well as higher lipids content compared to other carcass parts. .
AB  - Meso vrata svinje se, prvenstveno, koristi za roštilj. Radi sprečavanja nastanka oksisterola tokom termičke pripreme važno je da se poznaju sadržaj masti, holesterola i aktivnost enzima koji redukuju lipidne perokside. U radu smo ispitali aktivnosti enzima koji redukuju lipidne perokside u mesu vrata svinja, glutation peroksidaze (GSH-Px; EC 1.11.1.9) i glutation reduktaze (GR; EC 1.6.4.2.), kao i sadržaj masti i holesterola. Ispitivanja su pokazala visoku aktivnost oba glutation-zavisna enzima (GSH-Px i GR) u mesu vrata svinja kao i veći sadržaj masti u odnosu na druge delove trupa. .

AB  - U prethodnom radu pokazano je da lipidna frakcija koja se javlja u hemolizatu
zdravih ljudi predstavlja holesterol (asosovan sa fosfolipidima) čvrsto vezan za hemoglobin
(Hb-Ch). U ovom radu ispitivan je uticaj Hb-Ch na anti-oksidativni enzimski
sistem u humanim eritrocitima. Određena je aktivnost superoksid-dizmutaze, katalaze,
glutation-peroksidaze i glutation-reduktaze, kao i sadržaj met-hemoglobina (metHb)
u eritrocitima 60 qudi, podeqenih u dve grupe na osnovu količine Hb-Ch. Rezultati
pokazuju da količina prisutnog Hb-Ch ne menja aktivnost merenih enzima, niti nivo
metHb.Međutim, u grupi ispitanika sa povećanim sadržajem Hb-Ch zapažene su korelativne
promene u delu anti-oksidativnog enzimskog sistema povezanog sa glutationom.
U istoj grupi detektovane su i veće koncentracije ukupnog holesterola i triglicerida
u plazmi, što zajedno ukazuje na povećani peroksidativni pritisak iz plazme. Ovi
rezultati ukazuju da odbrambeni anti-oksidativni enzimski sistem u humanim eritrocitima
prilagođava svoju organizaciju prema zahtevima iz svog okruženja.
AB  - In a previous study, it was shown that the lipid fraction, which is occasionally observed in red blood cell hemolysates, represents cholesterol (Ch) associated with phospholipid firmly bound to haemoglobin (termed Hb-Ch). The current study was conducted to investigate whether Hb-Ch could affect the primary anti-oxidant enzyme defence system in human erythrocytes. Sixty healthy volunteers were used for the current study. Group 1 consisted of 28 subjects without or with a low level of Hb-Ch. Group 2 comprised 32 subjects with a considerably higher level of Hb-Ch. The activities of erythrocyte superoxide dismutase, catalase, glutathione peroxidase and glutathione reductase, as well as the content of methaemoglobin (metHb) were measured in both groups. The results indicated that the amount of Hb-Ch neither influenced the activities of the erythrocyte anti-oxidant enzymes nor altered the level of metHb. However, a higher amount of Hb-Ch changed the correlations in the part of the anti-oxidant defence system relating to glutathione, suggesting increased peroxidative pressure from plasma lipids. Group 2 also had significantly increased concentrations of total plasma Ch and triglycerides. Together, these facts are strong indications that the anti-oxidant defence system in human erythrocytes finely retunes its composition according to plasma oxidative demands.
